Sakai Shigekatsu Mioroshi Deba
This beautiful Japanese fish knife has a classic single-sided sharpened blade. The knife has a core of Japanese Shirogami carbon steel and a traditional handle of Honoki wood. This knife is completely forged by hand by Shigekatsu-san and is unique in its kind. Compared to a similarly sized Hon-deba, the blade of the Mioroshi Deba is narrower, thinner and has a more acute point. A Mioroshi Deba is perfect for filleting and distributing fish, but it can also slice fish very well. Some people consider the Mioroshi Deba to be a combination of a Hon-deba and Yanagiba.
