What are Funayukis?

Funayuki is a broad classification of knives that can refer to a range of different design features. Originally, the funayuki was designed as a multifunctional knife for use on fishing boats. Nowadays, the way the term is used depends on the knife maker and how they choose to design and market their knives. Various characteristics that have funayukis in common are: a fairly flat blade profile with relatively little belly; a short, handy size; and the knife can be single sided or not. In general, these knives are great additions or replacements for the gyuto or chef's knife like a centipede in the kitchen. Many funayukis are for preparing fish, just like a deba or a yanagiba. Users interested in these knives should read the product descriptions carefully to make sure, given the huge variety of designs, that the knife they are looking at is suitable for the intended application.
