Chinese chopping knife (vegetable knife) from Shimizu Hamono Kogyousyo (Japan).

Chinese-style vegetable knife (Chinese Cleaver) made from Japanese carbon steel (mono-steel). This knife is intended for embossing vegetables and for cleaving meat. (not suitable for splitting bone and bone, you must use a Deba for this). The blade is manually sharpened and has no thickening which makes grinding very easy. These special vegetable knives are forged in the small forge of Shimizu Hamono Kogyousyo in Seki (Japan). This forge also makes the well-known barber scissors of Toginon.
