Traditional sanmai forged knife steel, 3 layers.

Hand-forged steel with a straight  pattern. Every piece is unique! The piece is made of 9Cr18Mov as core steel and a softer rust-resistant layer (430 stainless steel. (1 layer each side)) on the outside. Rockwell hardness of 57 for the core layer and 20 for the stainless steel outer layer.

The steel is delivered unprocessed and uncut, the steel is already hardened! Grinding is therefore only possible on water stones. The photo with the ground side is for illustrative purposes only, this piece of steel is supplied uncut.

This steel can be etched with ferric chloride (fecl3) or with hydrochloric acid (10%), etching with hydrochloric acid takes much longer but hydrochloric acid is easily available in the hardware store.

It is also possible to hammer patterns into the steel yourself, the steel must then be "relieved" of its hardness, this can be done by performing the following steps:

  • 1st step - the steel must be annealed to a cherry red color (about 800 degrees C.), Then allowed to cool slowly (not in water!)
  • 2nd step - with a suitable hammer it is possible to punch figures into the sample yourself
  • 3rd step - After cooling, the steel can be ground to the desired geometry. However, the cut must remain at least 1 mm thick to prevent tearing.
  • 4th step - Now the steel needs to be heated to around 1050 degrees C, and then hardened in pre-heated water (50 degrees C)
  • 5th step, let cool and then a few hours in the oven at 200 degrees C.
  • 6th step, sharpening into a razor sharpness on Japanese water stones.
