Sakai Takayuki Aonikou Usuba (Vegetable Knife),

Sanmai forged blade of stainless steel with a core (Hagane) of Japanese Aogami # 2 steel (non-stainless) and an outer layer (Jigane) of non-stainless steel. This very special and difficult to obtain knife was made in the famous knife town of Sakai by master Kenji Togashi and then sharpened by hand by master sharpener Yukinori Oda. Both gentlemen are among the best knife makers in the world and are known worldwide. The traditional blade is single-sided. Usuba knives are traditionally used in Japan for peeling and chopping vegetables. The shape of this knife is ideal for embossing.
