Brieto Kyoto damast TKT-1112 Sujihiki (fish knife) 270 mm
Brieto Kyoto Tamahagane Damask Sushi knife,
Double-sided laminated blade made of stainless Japanese Mo-V steel with an outer layer of very nicely forged 63 layers of damask steel. The handle is made of hollow 18-8 stainless steel and this makes the knife resistant to sterilization processes (no chlorine). The blade is extremely thin and manually sharpened and has no thickenings which makes sharpening very easy.
A Sujihiki is a Japanese fish knife with a long, narrow blade. These knives are primarily developed for cutting raw fish, but can also be used for the tranche of roast or fried meat.
