Brieto-PRO M1212 Sujihiki,
Double-sided sharpened blade made of stainless Japanese Mo-V steel with dents in the blade to prevent sticking. The handle is made of hollow 18-8 stainless steel and this makes the knife resistant to sterilization processes (no chlorine). The blade is extremely thin and manually sharpened and has no thickenings which makes sharpening very easy.
A Santoku (literally "Three uses") is a Japanese universal knife. These knives have been developed for cutting meat, fish and vegetables (the three virtues) but can also be used to emboss vegetables with the high blade.

Cleaning and drying after each use is the best treatment for these exclusive products.
