Tsutomu Kajiwara Sumi Gyuto,

This Japanese Chef's knife has a core of Japanese Aogami # 2 "Blue paper" non-stainless carbon steel with a very nice damascus pattern. The blade is sharpened on both sides.

This knife is completely forged by hand by the master smith Tsutomu Kajiwara (1952) and is unique in its kind. The blade is fairly thick for Japanese knives. The edge is sharpened manually and has no thickening which makes grinding very easy. A Gyuto is the Japanese variant of a Chef's knife and is suitable for cutting meat, fish and vegetables.
