This Japanese fish knife has a Sanmai forged blade with core steel of Japanese SK steel (non-stainless) and a softer steel type for the outside. This single-sided sharpened knife is completely hand-forged by Miki Hamono's masters and is unique in its kind.
An Ajikiri knife is the typical Japanese fish knife for preparing raw fish. (specifically developed for Horse Mackarel)
