This Japanese sushi knife has a blade of Japanese "silver steel" carbon steel (non-stainless). This single-sided sharpened knife is completely hand-forged by the master smith Takehiro-san of Miki Hamono and is unique in its kind. A Takohiki knife is the typical Japanese sushi / sashimi knife with a square end, because of its shape and length, this knife is ideal for cutting raw fish. The length makes it possible to cut a piece of sashimi in 1 stroke.

Because this knife has a Mune-machi (notch in the blade when entering the handle), the length is traditionally measured from the machi, the blade knife is therefore somewhat shorter than the "regular" takohikis of the same length that are measured from the Ago (back point).
