This Japanese sushi knife has a blade of Japanese Gingami #2 "silver steel" carbon steel (non-stainless). This single-sided sharpened knife is completely hand-forged by the master smith of Miki Hamono and is unique in its kind. A Yanagiba knife is the typical Japanese sushi / sashimi knife, because of its shape and length this knife is extremely suitable for cutting raw fish. The length makes it possible to cut a piece of sashimi in 1 stroke.

Because this knife has a Mune-machi (notch in the blade when entering the handle), the length is traditionally measured from the machi, the blade knife is therefore somewhat shorter than the "regular" yanagibas of the same length that are measured from the Ago (back point).
