Tsutomu Kajiwara Sumi Sujihiki,

This short Japanese Sashimi knife has a core of Japanese Aogami # 2 "Blue paper" non-stainless carbon steel with a very nice damascus pattern. The blade is sharpened on both sides. This knife is completely hand forged by the master smith Tsutomu Kajiwara (1952) and is unique in its kind. The blade is very thin and sharpened manually and has no thickening which makes grinding very easy. A Sujihiki is the double-sided cut variant of a Yanagiba. A Sujihiki is therefore somewhat easier to handle than a single-sided sharpened Yanagiba and is also a bit thinner and lighter. A Sujihiki is very suitable for cutting fish and meat and can also be used for cutting "Sushi rolls".
