Blade of non-rustproof Japanese Aogami # 1 Blue steel with two layers of non-stainless steel for the outside (Sanmai forged). This knife is completely hand-forged by mastersmith Takeo Murata. A Gyuto is a universal chefs knife and extremely suitable for cutting meat and fish, but also cutting fruit and vegetables is no problem.
