Tsutomu Kajiwara Sumi Sujihiki,

This Japanese Sashimimes has a core of Japanese Aogami # 2 "Blue paper" non-stainless carbon steel with a very nice damask pattern. The blade is sharpened on both sides. This knife is completely hand-forged by the young master blacksmith Tsutomu Kajiwara and is unique in its kind. The blade is very thin and manually sharpened and has no thickening, which makes sharpening very easy. A Sujihiki is the double-sided cut version of a Yanagiba. A Sujihiki is therefore a bit easier to handle than a single-sided Yanagiba and is also somewhat thinner and lighter. A Sujihiki is very suitable for cutting fish and meat and can also be used for cutting "Sushi rolls".

  • Blade length: 270 mm
  • Total length: 415 mm
  • Weight: 146 grams
  • Steel type: core steel: Japanese Aogami # 2 steel with a damask protective layer. Non-rust resistant.
  • Hardness: 61-63 (Rockwell C)
  • Handle: D-shaped Rosewood (Dalbergia oliveri) and head of black pakka wood. (only suitable for right-handed use!)

Like all Japanese knives, the handmade knives from Kajiwara-san are not dishwasher safe, cleaning and drying after each use is the best treatment for these exclusive products.
