Takamura VG-10 Gyuto, Tsuchime, 

Blade of stainless Japanese VG-10 steel with two layers of stainless steel for the outside (Sanmai forged) with fine hammer pattern (Tsuchime). This knife is completely hand-forged in the smithy of Takamura. Takamura is one of the better known cutlery makers and a number of famous top chefs use Takamura knives like John Emerson, Gordon Ramsay, Ren'e Redzepi, Mark Best, David Chang, Narisawa and Hiromi Yamada. The Nakago (part of the knife that is in the handle) does not completely go through to the underside of the handle, so there is no noticeable transition and this ensures a very smooth finished handle. The Japanese version of a chef's knife is called "Gyuto" and has the same cutting characteristics as a French model chef's knife.
