Tadafusa K-serie Mioroshi Deba Shirogami steel,

Single-sided sharpened 3-layer blade with a core of non-stainless Shirogami # 2 steel. The blade is thin and manually sharpened and has no thickenings which makes sharpening very easy. This knife has a D-shaped handle and is therefore only suitable for right-handed use. A Mioroshi Deba is a thin deba that is very suitable for the heavier jobs in the kitchen. For example, the removal of fish heads, cleaving of bones, bone and ribs. This knife is thinner than a traditional Deba (and therefore also more versatile) and thicker than a Gyuto (Traditional Japanese chef's knife).
