Sakai Takayuki Aonikou Usuba (Vegetable knife),

Sanmai forged blade made of stainless steel with core (Hagane) of Japanese Aogami # 2 steel (non-stainless) and an outer layer (Jigane) of non-stainless steel. This very special and difficult to obtain knife was made in the famous knife city Sakai by master Kenji Togashi and then hand-sharpened by master grinder Yukinori Oda. Both gentlemen are among the best knife makers in the world and are known worldwide. The traditional blade is single-sided. Usuba knives are traditionally used in Japan for peeling and chopping vegetables. The shape of this knife is ideal for chopping vegetables and spices/herbs.
