Japanese oyster knife

The oyster knife is made in the Japanese knife-head Seki of stainless steel and has a length of 15cm with a blade length of 6.4 cm (1.5 cm wide). The blade is vertically attached to the handle. The convex beech wood handle is comfortable in the hand and provides sufficient grip to exert force when the oyster is pried open.

How do you open an oyster?

Always wear a glove when opening an oyster.

Hold the oyster with your one (protected) hand, with the flat side up and with the hinge (the narrow side) towards you. Place the oyster knife in the hinge, and pry very quietly, with a rotating wrist movement, open the oyster. Now scrape the knife along the flat side of the oyster. This is how you cut loose the sphincter of the oyster. Now you can open the shell.

Remove any grit with the knife and cut the oyster at the bottom. Turn the oyster in the shell, with the nice side up.
