Konosuke GS gyuto, 240 mm, Khii rosewood handle, SLD steel.

Double-sided ground blade with a core of special Japanese SLD Magic steel encased in an outer layer of softer stainless steel for protection (sanmai forged). The blade is extremely thin and manually sharpened and has no thickening which makes grinding very easy. The handle is octagonal and made from Japanese rosewood. The knife is designed to cut both fish, meat and greetings and is similar to Western chef's knives, however, this knife is much thinner and with a razor sharp edge, making the weight (approximately 135 grams) more than half that of comparable German knives. The low weight makes working with this knife last much longer.
