Masamoto HonKasumi Gyokuhakukou Takohiki (sushimes), KS0130, 300 mm

Laminated blade of non-stainless steel with core of Japanese Shirogami #1 steel and manually ground according to the HonKasumi Gyokuhakukou style. The traditional blade is manually forged and sharpened by the 7th generation masters Tsukiji Masamoto. The Masamoto Forge was established in Tokyo in 1845 and is regarded as one of the best forges in Japan and abroad.

Takohiki knives are traditionally used in Japan for filleting fish for Sashimi and cutting Sushi. The blade length is long enough to cut entire sashimi pieces in one slice of the fish.
